The organic produce haul today. Figs, grapefruit, cucumber, peaches. Already ate one of the peaches and it might’ve been the best peach I’ve ever had. 100% organic raw vegan carrot cake balls!
-5 cups carrot pulp (I used my Omega 8004 juicer for my carrot breakfast juice and kept the pulp to use for this recipe)-2 cups medjool dates-2 cups raw walnuts-1.5 cups raisins-2 tbsp raw shredded coconut-1.5 tbsp nutmeg-1.5 tbsp cinnamon-1 tsp fresh grated ginger-1/2 tsp Himalayan pink salt1. I used the blank plate of my Omega 8004 juicer to crush the dates, 1/2 the amount of walnuts, and coconut. I’m sure a food processor works just fine.2. Combine that mix with the carrot pulp, rest of the walnuts, raisins (I chop half of the amount up a little bit), spices, and salt. I use my hands to get in there reaaaal good.3. Use a tablespoon to measure out the balls and roll em up!

I definitely didn’t do that much. I just did 2 cups of flax seed meal and 2 cups of almonds and adjusted everything else accordingly. And even that yielded a shitload of chips. Basically, it was a sandwich on hemp bread with a raw patty that was made out of sunflower seeds, almonds, celery, pickles, kelp, dill, and spices and has a cashew mayonnaise on it with raw tortilla chips and a spring mix salad with either sauerkraut or kimchi, not sure which. And I added a kombucha for good measure. And they had pink salt on the table. 
They also have a brand new cookbook with recipes for pretty much everything on the menu for $20. It’s a beautiful book with photos and detailed instructions so make these amazing dishes. I totally bought that shit up. Prepare for posts about all the awesome stuff from this book I make.
